Savory Smoked Salmon and Caper Bread Pudding

  • 1 Sourdough Baguette a day or 2 old
  • 2 -3 large Eggs
  • 1 cup Whole Milk
  • 1 TBLS Fresh Dill minced
  • 4 oz Smoked Salmon
  • 3 TBLS Cream Cheese
  • 1/4 cup Parmesan cheese grated
  • 1 tsp Capers
  • 6-8 Caper Berries
  • 1 tsp sea salt
  • 1/4 tsp black pepper


  1. 1. Preheat the oven to 330 degrees. Lightly butter or grease with olive oil a baking dish and set this aside. 

    2. Cut the sourdough a few day old baguette. It will be a bit tough to cut since it is hard. Place the pieces in a bowl. 

    3. In a separate bowl whisk together the eggs, milk, dill, salt and pepper. Pour this liquid mixture over the  cut bread and mix it well together. Then gently pour this mixture into the greased baking dish. Top with the shaved Parmesan cheese. Place this in the oven to bake for 20-25 minutes. (I recommend more on the 25 minutes side). 

    4. Once baked carefully remove the dish from the oven. Top with the smoked salmon, the cream cheese, and the 2 kinds of capers. If you would like garnish with a bit more dill and serve.
