Healthy Peanut Butter Crunch Bars

Ingredients

  • 1 1/4 cup Organic Creamy Peanut Butter melted, I recommend Trader Joes Peanut Butter
  • 1/3 cup Honey melted
  • 3.5 cups Brown Rice Crispy Cereal

Chocolate Topping

  • 1 cup Dark Chocolate Chips melted
  • 2 TBLS Coconut Oil

Instructions

  1. 1. Line an 8x8 baking pan with parchment paper and set aside. 

    2. In a microwave safe bowl melt together the peanut butter and honey. Once they are both soft and melted carefully mix together using a spatula. It will be separated until you mix for about 30 seconds and it will come together. 

    3. Pour into the bowl with the peanut butter and honey the brown rice cereal and fold everything together. Pour this mixture into the parchment lined 8x8 baking pan. 

    4. Using a microwave safe bowl melt the dark chocolate chips and coconut oil. I recommend microwaving for 30 seconds at a time. Once melted carefully remove from the microwave and using a spatula and stir the mixture together. Pour the chocolate over the peanut butter crunch. Place the baking pan in the freezer for 2 hours to set. 

    Once set using a very sharp knife cut into individual servings. 

    The Peanut Butter Crunch Bars keep in the freezer in an airtight container or a freezer bag. 

    Keeps for up to 1.5-2 months
