Why Cookies (these cookies) are good for you

Almond butter is it really that good for you and why? Sounds like a thesis to a nutrition class (haha). No, but seriously let’s talk about why almond butter is good for you and why this cookie is actually health benefitting.

Of course when you hear the word cookie you don’t naturally associate it with health, but I am here to change your opinion of that. These cookies are yes a treat, but one that you can feel good about eating and also feel good to give/serve to your family. We all search for better cookies and sweet delights. No one wants to feel over sugared and unhealthy, yet we still want to indulge and delight in the sweet things. These cookies are a beautiful blend of just that.

 

 

 

Almond Butter 

 Is a better healthier fat than butter or oil (especially vegetable or canola oil). Almond butter should have 2 ingredients, almonds, and sea salt, that is it. This healthy fat is a rich source of vitamin e, which is an antioxidant. This means it helps the body fight free radicals and against disease. When enjoying one of these cookies you are eating a big dose of vitamin e, which then boosts your antioxidant levels. It also helps balance cholesterol which in turn balances your hormones. This is key for a state of wellbeing, balancing our hormones.

Rolled oats

Rolled oats are a big boost of fiber. We hear a lot about fiber these days in the media and medically we are becoming more and more aware of the benefits of fiber. These cookies are like eating a large dose of fiber because of the rolled oats. That isn’t to say that the cookies contain all you need in a day, nope, but they do help drive your daily in take of fiber. Rolled oats are a whole grain, meaning they contain the 3 parts of the wheat/grain kernel. Which means more vitamins and mineral as well.

Dark Chocolate

Like almond butter dark chocolate is a healthy source of antioxidants. A daily dose or serving of dark chocolate a day has invaluable health benefits. So don’t say no to chocolate, say yes to dark chocolate!

Sea Salt

Salt is composed of minerals and these minerals are essential for cellular function to occur. We eat a lot of processed foods unfortunately in this country, which makes me very sad. By eating more of our vitamins in minerals we can change our nations health. Sea salt is a critical aspect in this. The minerals that are found in sea salt contain trace elements and nutrients we need to balance our cells. If our cells are unbalanced then our entire body is out of whack. A touch of sea salt will help to balance our cells and balance our bodies.

Almond Butter Flourless Cookies

Ingredients

  • 1 Cup Crunchy Almond Butter I used Whole Foods 365
  • 1/3 cup Cane sugar
  • 1 tsp Vanilla Extract
  • 2 Large Eggs
  • 3/4 cup Rolled Oats - Gluten free
  • 3/4 cup Dark Chocolate Chunks
  • 1 tsp Rock salt for garnish
  • Chocolate for drizzle

Instructions

  •  1. Preheat the oven to 350 degrees and line baking sheet with parchment paper. Set this aside. 
    2. In the bowl of the stand mixer add the crunchy almond butter, vanilla extract, 2 eggs, and sugar. With the paddle attachment on cream everything together until a smooth consistency is created. With a spatula fold in the rolled oats and dark chocolate chunks. 
    3. Evenly scoop the cookie dough onto the lined baking tray. Make sure to leave about a 2 inch space between the cookie dough because the cookies with spread out. Top each cookie with rock salt and pop the baking tray into the oven. 
    Bake the cookies for 10-12 minutes, closer to the 12 minutes. Remove the cookies from the oven and allow them to cool for 10 minutes. Then transfer them to a cooling rack. 
    Drizzle with melted chocolate if desired.
