OH MY GOSH! Literally like the best appetizer in the entire world, baked brie. I love when the holidays come around because that means brie dip at almost every holiday event. So who doesn't love warm melted cheese, with a little hint of sweet honey, and aromatic and hearty herbs. UGH, I want to eat this right now.
This appetizer is a classic at most cocktail parties and it should be. Cheese is a beautiful, delicate, and absolutely perfect food. Each cheese is unique and has its' own flavor profile and texture. My favorite is to use crunchy crackers like Stacy's Pita Chips. They make for a perfect chip to dip into this decadent, elegant, and magnificent appetizer.
If you are a hosting a party, dinner, or cocktail event this will be a winner with your guests. Really I don't think there is a person who doesn't love a brie dip. This one is more elegant and wintery with the addition of the honey and herbs, but you can add your own twist to this brie dip. Baking it in the cast iron skillet is really easy and contains the melting oozing warm cheese nicely. I do recommend that you put a pot holder of the handle or little note next to the skillet brie dip notifying your guests that the dish is hot.
Right before your guest arrive pop the skillet into the oven and it will be ready and baked when they arrive.

Yields 10-12 servings
Time 20-25 minutes
1 large brie cheese
2 Tablespoons honey
1 Tablespoon fresh rosemary
1 Tablespoon fresh thyme
1. Preheat the oven to 350 degrees.
2. Place the brie in the skillet dish and top with honey and scatter the thyme and rosemary on top. Place the iron skillet into the oven and bake for 18-22 minutes until the brie begins to ooze.
3. Carefully remove the skillet and place it on your table and dig in!
