We are in the middle of football season and it is great! I am a really big college football fan and the Miami Hurricanes is my team. Are you a football fan? Who is your favorite team to watch? I love to watch the games and this year (so far, knock on wood) we are doing pretty well. So it is fun to get together with some friends and family, have some drinks and definitely some food. I wanted to make an appetizer that everyone would enjoy and not break the calorie bank. We know how caloric some of those appetizers can be. Instead of making one of those I created a better for you version of a nacho dip with vegetables.
Nachos are delicious to say the least. Hot melted cheese you can't go wrong with that! To make this dish a bit more elegant I paired the ooey gooey nacho cheese dipping sauce with crudite and chips. A crudite is a platter of raw vegetables. I know that when we think sports and game day food raw vegetables is not the first dish on your mind. I love to serve a crudite platter because it offers color to the spread. Colors entice us to want to eat so when we see beautiful green, white, and orange (yes the colors of the Miami Hurricanes and completely unintentional) we become hungry and interested in the food in front of us. When we serve it with a nacho cheese sauce well we should be serving with something better for us like vegetables. Plus vegetables and cheese are beautiful mix. Like last week when I made the baked cauliflower mac n' cheese!
Also this recipe literally takes no time at all. The last thing you want to be doing when your team is playing to spending time in the kitchen. I definitely don't want to be. I want to either be tailgating, at the game, or watching it on tv. You can prepare it earlier in the day and just warm up the nacho cheese dipping sauce when you are ready to serve the platter. Last note about this dish is if you have little kids and you are trying to get them to eat their veggies they won't be able to turn down a nacho cheese dipping sauce!
Nachos are a typical game day food. The salty warm gooey texture of nacho cheese sauce is perfect to enjoy when the weather is changing to a crispy fall feel, you are having a great time cheering on you team, and indulging in something like nachos on the weekend. This crudite nacho cheese platter is one that you can feel good about! So indulge away while you watch your favorite sports team go on to victory.
Yields 1 cup of sauce
Time 20-25 minutes
1 cup Whole Milk
3 tablespoons Flour
2 tablespoons Butter
3-4 ounces Sharp Cheddar Cheese- grated
Salt and Pepper
Crudites: Broccoli Florets, Cauliflower Florets, Carrots, Celery, Green Beans, Chips
1. In a sauce pan heat over medium heat the milk and butter. Once the butter has melted whisk in the flour. Continue whisking until the liquid mixture has thickened slightly.
2. Add the grated cheddar cheese in the milk mixture and whisk. You are looking for a thick cheesy creamy texture. Season with salt and pepper and adjust seasoning to your taste. Once the desired consistency has been reached remove from heat. Remember it will become a bit thicker once off the heat.
3. Clean, dry, and assemble your platter. Place the nacho dip in a bowl and in the center of the crudite and enjoy.
