Salsa Verde Jalapeno Shrimp

Salsa verde is a Mexican salsa that is so simple to prepare. It can be used as a finishing sauce, a marinade, or a dipping sauce. Now for the hot summer months this sauce will be in my fridge every week.

Salsa verde uses green tomatillos. Which provide a really bright and tangy flavor to a dish. That is one reason why I love to make it for a marinade or a finishing sauce. For this salsa verde jalapeno shrimp dish it makes for the best finishing sauce. A finishing sauce is a sauce that brings the dish together or completes a dish. It elevates the meal you made to become one with a lot more flavor. Think of a finishing sauce as like a salad dressing. Eating a salad without the salad dressing is boring, but once the dressing is drizzled and mixed into the salad it transforms the dish.

Shrimp with salsa verde is really really really good. Since you know me and my style of cooking is quick and easy this is a favorite weeknight meal to make. Plus it makes it easier when the salsa verde has already been prepared earlier in the week!!! Preparing the shrimp with some red onions and fresh jalapenos (of course optional) adds some spice and tons of flavor. This dish is best served over white rice.

Salsa Verde Jalapeno Shrimp

Cook Time 20 minutes

Ingredients

  • 1 lb Shrimp peeled and deveined or frozen shrimp
  • 1 fresh Jalapeno sliced
  • 1/2 Red Onion quartered
  • 1 TBLS Olive Oil or Butter
  • 1 tsp Cumin Powder
  • 1/4 cup Fresh Cilantro minced
  • Salt and Pepper to taste

Salsa Verde

  • 4 Tomatillos peeled and halved
  • 1 Garlic Clove
  • 1 cup Fresh Cilantro
  • Salt and Pepper to taste
  • 1-2 Limes juiced

Instructions

  • 1. To prepare the salsa verde, add all the ingredients in a high powder blender. Blend on high until smooth. Season to taste.
    2. In a saute pan heat over medium heat with olive oil. Once hot add the onions and a pinch of salt. Stir and then let cook for 3 minutes.
    3. Season the shrimp with cumin, salt, and pepper. Add the shrimp to the pan with the onions stir the ingredients together. Let the shrimp cook for 5-6 minutes then add the jalapenos if using. Continue to cook until the shrimp have cooked, curled, and turned pink.
    4. Once the shrimp has cooked place them over a bed of rice and top with salsa verde. Garnish with fresh cilantro and serve.
