Healthy Peanut Butter Crunch Bars

Healthy Peanut Butter Crunch Bars are an amazing healthy dessert. When the weekend hits you deserve a sweet treat. But why not make it better for you? The hard shell chocolate on top will make these Peanut Butter Crunch Bars the ultimate meal prep dessert in your fridge.

Ready to make these? You need just a few ingredients that are filled with benefiting nutrients and they are so simple to prepare. All you need is one bowl and one pan for these to set. To make something decadent you don’t have to spend hours in the kitchen. One thing that happens with dessert is that we tend to skip it. I am totally against that. Desserts can be so delicious and amazing. The key is use other natural forms of sugar. That way when we do have them around the house we don’t feel guilty for indulging.

Something sweet for the weekend allows you to look forward to something. Make a batch of these for your weekend and keep them in the freezer. These healthy peanut butter crunch bars will keep for up to 2 months in the freezer and that way you don’t have to prepare them all the time.

If you are more of that mid-day sweet tooth person these make for the best little mid-day treat. There are no added unnatural sugars, filled with wholesome organic peanut butter, whole grains, and dark chocolate. Can you ask for anything else?

Healthy Peanut Butter Crunch Bars

Servings 10


  • 1 1/4 cup Organic Creamy Peanut Butter melted, I recommend Trader Joes Peanut Butter
  • 1/3 cup Honey melted
  • 3.5 cups Brown Rice Crispy Cereal

Chocolate Topping

  • 1 cup Dark Chocolate Chips melted
  • 2 TBLS Coconut Oil


  • 1. Line an 8x8 baking pan with parchment paper and set aside. 
    2. In a microwave safe bowl melt together the peanut butter and honey. Once they are both soft and melted carefully mix together using a spatula. It will be separated until you mix for about 30 seconds and it will come together. 
    3. Pour into the bowl with the peanut butter and honey the brown rice cereal and fold everything together. Pour this mixture into the parchment lined 8x8 baking pan. 
    4. Using a microwave safe bowl melt the dark chocolate chips and coconut oil. I recommend microwaving for 30 seconds at a time. Once melted carefully remove from the microwave and using a spatula and stir the mixture together. Pour the chocolate over the peanut butter crunch. Place the baking pan in the freezer for 2 hours to set. 
    Once set using a very sharp knife cut into individual servings. 
    The Peanut Butter Crunch Bars keep in the freezer in an airtight container or a freezer bag. 
    Keeps for up to 1.5-2 months
