Holy Guacamole

It's that time of year when we start talking about guacamole. Summer is basically here and avocados are totally in season. I am jumping in my seat with joy!!! Living in South Florida we are very lucky to get them pretty much year round and different varieties. To be honest I prefer the Florida avocados versus the Haas. I mean I will definitely eat both, but if I have to choose.

There is a very big trend for avocados, everything from avocado toast to avocado chocolate puddings (which are very delicious), it's what is in. Avocados are a beautiful fruit! I have always grown up eating avocado as a side to my meal. I am of Cuban and Brazilian heritage so in my cultures avocado isn't a trend its a part of our cuisine. They are an outstanding form of monounsaturated fats, which is a unique quality for a fruit. Most fruits are sweet, sugary (the good kind), and not creamy. They are rich in fiber and vitamin C and B. They are so incredible that they help in absorption of beta-carotene (Vitamin A). Basically they are a glorious food item and should be a part of your diet.

This is a classic avocado recipe, guacamole. I am not reinventing the wheel or anything. Avocado in its more pure taste like guacamole is a delicious summer dip to have pool side, keep in the fridge to snack on, and fun to make.

Yields 4 servings

Time: 10-15 minutes

8-10 ripe Haas Avocados

1/4 cup red onion - small dice

2 vine ripe tomatoes - small dice

2 limes -juiced

Salt + Pepper

Cilantro (optional)

1. Halve and peel the avocados. Carefully remove the pit from the center. Place the avocado in a large bowl. Mash well with the back of a fork. Squeeze in the lime juice.

2. Dice very finely the onion. Rinse it over cold water and dry well. Add it to the bowl of mashed avocados. Dice the tomatoes and add as well. If you are adding cilantro add it in as well.

3. Mix gently. Then add salt and pepper, mix and taste. Adjust the seasoning to your liking.

Serve with chips and enjoy!
