Baked Chicken with Cilantro Lime Sauce

Quick, easy, and delicious is the name of the game. Herbs are a wonderful inexpensive way to brighten up a dish both visually and flavor wise. You can make this meal for $10-$15 for 4 servings. It is a balanced nutritious meal that doesn't cost too much and doesn't take up a lot of time.

No one wants to eat a boring white meat, no bone, no skin, flavorless chicken breast, let's be honest. It is like eating cardboard. Chicken breast is good for you, well as are the rest of the cuts of chicken. So to be honest this recipe can be made with any cut of the chicken, heck even roast a whole chicken and lather the cilantro lime sauce over the crispy roast chicken. Now I know how I am going to prepare this recipe next time. Brainstorming and blogging! 

Herbs! Don't be afraid to use them. They make for a beautiful garnish, but if you are not into the elegant garnish use it in the dish. This sauce is great over chicken, steak, pork, and shrimp. You can even add a little sour cream or yogurt and dollop it on roasted potatoes, or even use it as a salad dressing. Be creative this recipe is very versatile and extremely delicious. 



Yields 4 servings

Time: 30-35 minutes


4 boneless skinless chicken breast (preferably organic) 

1 yellow onion -sliced 

2 tablespoons olive oil 

Salt + pepper

Cilantro Lime Sauce:

1/3-1/2 cup fresh cilantro leaves

1/4 cup extra virgin olive oil 

1 lime- juiced 

2 garlic gloves - smashed 

Chili Flakes (optional) 

1-2 teaspoons salt (make sure to taste)

1 teaspoon black pepper


1. Preheat the oven to 350 degrees. 

2. Slice the onion and layer it on the bottom of an oven proof pan. Season both sides of the chicken breast and place them on top of the sliced onions. Drizzle with olive oil and bake in the oven for 25-30 minutes, until the chicken is fully cooked. 

3. While the chicken cooks you can prepare the cilantro lime sauce. Add all the ingredients for the sauce in a food processor, blender, or nutribullet. Turn the mixer on and let is blend until almost smooth. I prefer the sauce slightly chunky for some texture. If you are adding the sour cream or yogurt, add it after it has blended well and just mix to incorporate. Taste and adjust the seasoning to your preference. 

4. When the chicken is cooked, remove it from the oven and pour the cilantro lime sauce over it and serve.
