Beef with Cuban Sofrito & Sweet Plantains

Sofritos are the classic vegetables of a cuisine that are used as the base for many dishes. It is the distinct flavor of the cuisine. The Cuban sofrito is onion, green bell pepper, and garlic. Always sautéed at the beginning of cooking. Sofritos add a lot of flavor to dishes. The classic French sofrito known as mirepoix are onions or leeks with celery and carrots. The Italian sofrito are onions, tomatoes, and garlic. Sofritos are classic gastronomic tools to cuisines. 

f course variations and additions of ingredients to the sofrito occurs in many recipes. It adds more complex flavors to the dish. Cooking with a sofrito is a great way to add more flavors to a dish and more nutrients. The more vegetables the better thats my motto! 

Plantains are a staple food item to the Cuban cuisine. I love the sweet plantains, but they are typically fried. Instead of frying the plantains, which is very bad for your health to eat fried food. I am an advocate of eating fat in your diet, but only good quality fat, and fried foods are definitely not in that category. Add the sweet plantains to the sofrito to add a bit of natural sweetness to the dish, and because they are delicious! 

Yields 2 servings 


3/4 lb of stewed beef- cubed

1 small yellow onion - medium dice

1 green bell pepper - small dice 

2 garlic cloves- minced 

1 ripe plantain - quartered 

1 teaspoon dried oregano 

Salt + Pepper 

Olive oil 


In a skillet add the olive oil over medium heat. Once hot add the onion with 2 pinches of salt. 

Season the beef with salt and pepper. 

Add the green bell pepper and garlic to the saute pan. Season with salt and pepper. Let this cook for about 2 minutes. Then add the sweet plantain. Allow this to cook for 5-7 minutes, make sure there is enough olive oil so that the vegetables don't burn, you want them to sweat. Once they are tender, remove them from the pan. 

Add some more olive oil to the hot pan and add the beef. Cook the beef to your desired likeness. When the beef is almost done, add the sofrito with the sweet plantain back in the pan to warm it up and meld the flavors. Toss is a few times. 

Serve and enjoy!
