Chicken Tacos


Tacos are a great dinner recipe and it's also a great meal to prepare when you have company over. Every person gets to prepare their tacos the way they like. If you have children, this meal gets your kids in the kitchen and making their own meal. I am a big fan of getting kids in the kitchen young, the more they learn about different foods, flavors, and learning to do it on their own the more likely they will be to trying new things and enjoy it more. 

Setting up all the ingredients before hand makes this super simple. Put your salsa, lettuce, avocado (with some lime or lemon so it doesn't turn), cilantro, jalapenos, beans, cheese... and whatever else you like to add to your tacos in different bowls. If you are prepping this hours a head of time, wrap the bowls and plastic and place it in the fridge overnight if you are prepping way far in advance. Then when you are ready to eat, all you have to do is warm up the already cooked chicken and tortillas, and dinner is served. Seriously it is that simple! 

Yields 6 servings 


Roast Pulled Chicken Ingredients:

3 chicken breasts 

2 legs 

2 thighs 

1 onion 

Olive oil 

Salt + pepper 

1 large Onion - diced 

1 Garlic clove - smashed 

Taco Ingredients: 

Shredded Cheese 

2 tomatos - finely diced 

Romaine lettuce - shredded 

 Fresh Cilantro - rinsed and dried 

Salsa (I used 365 Whole Foods Medium) 

Refried beans 2 cans  (I used 365 Whole Foods organic can, they are really yummy) 

Pickled or fresh jalapenos - sliced 

3 Haas avocado - diced 

4 Limes - quartered 

2 packets Corn tortillas (I purchased 365 Whole Foods, in the frozen section) 


The chicken takes about 30-45 minutes to cook in the oven, but this can be done hours ahead or even the night before, which is what I did. 

Preheat the oven to 375 degrees.

Place the chicken on a roasting pan with the diced onion and smashed garlic clove. 

Season everything well with salt and pepper. 

Drizzle olive oil over. 

Place the roasting pan in the oven and allow this to cook for about 25-28 minutes. 

Then turn the heat up to 400 degrees and let this cook for another 10 minutes. 

Check the temperature of the chicken, it should read 160 degrees (it might read higher, especially the chicken breast which doesn't take as long as the other cuts). Remove from oven, and allow it to rest for about 5-7 minutes, it will continue to cook. 

Once it has cooled some, using 2 forks, pull the chicken apart, making pulled chicken. 

Remove the garlic clove, and mix together the pulled chicken with the onions. 

If serving then, assemble the tacos. 

If not, place in an airtight container and place in the fridge until ready. 

When ready to serve, heat the chicken on the stove top with a skillet pan, add some olive oil and warm the chicken and onions through. 

Place this in a large bowl. 

Set the station up to assemble the tacos. 

To heat the tortillas, wet/dampen paper towels. Alternating corn tortilla with damp paper towels until you have a stack. Place this in the microwave for 30 seconds and they should be soft and warm. Remove the paper towels and place the tortillas on a plate. 

Assemble your tacos and enjoy!
