Yields 2 servings
Mixed pepper greens (Organic Girl)
1/2 cucumber - peeled and large dice
1/3 cup strawberries - quartered
1 purple sweet potato - baked, peeled and diced
2 chicken legs or breast (or mixed) - I used left over roasted artichoke, oregano and garlic chicken- diced
Red Bell Pepper - diced
1/4 cup blanched almonds (can be replaced with walnuts or pistachios)
1/2 Haas avocado - diced
3 tablespoons tzatziki (recipe under Beef Kofta)
3 tablespoons extra virgin olive oil
1/2 lemon juiced
Salt + pepper
Place lettuce and greens in a large bowl.
Dice and prepare all the vegetables and fruit.
Add olive oil, tzatziki, and lemon juice, season well with salt and pepper.
Mix, and lightly coat with salad dressing.
Place on a plate and sprinkle with almonds and serve.
