Sweet potatoes, butternut squash, and sage don't these ingredients just sound like fall?!? This is a great weeknight meal to prepare filled with hearty flavors, vibrant colors, and decant aromas. All you need is one pot so clean up is simple and only 30 minutes and dinner is ready!
Everyone always says I want to cook healthy, but either don't have the time or don't know what to make. This is a recipe that should be added to your regular "healthy" meals. You can always change the vegetables and the protein to your liking. Make one pot dishes with a variety of flavors is a great way to save time and eat something good for you.
Yields 4 servings:
4-6 mixed boneless skinless chicken breast and thighs
2 medium sweet potatoes- peeled and diced
1 small butternut squash- diced and roasted
1 yellow onion - minced
1 garlic clove - minced
1 can of Cannelini beans - rinsed and drained
1 sprig of fresh rosemary - minced
1 bunch of fresh sage - half minced and save the other for garnish
Salt + Pepper
1/2 cup Chicken stock
1. Heat 1/4 cup of olive oil over medium heat in a large pan. Add the onions and a pinch of salt. Then add the seasoned chicken. Let this cook for 5 minutes.
2. Add the garlic, rosemary, sage, sweet potato, and butternut squash. Let this cook for another 5 minutes. Make sure to season well with salt and pepper.
3. Add the chicken stock and beans. Stir to incorporate everything and flip the chicken. Add some more fresh sage if you would like. Season again with salt and pepper now that the stock and beans are added. Bring it to a simmer on low, cover and let this cook for 15-20 minutes.
4. Once the chicken is cooked and sweet potato are tender, adjust the seasoning. Add fresh herbs to brighten the dish and serve.
