Thai Shrimp Coconut Curry

I read this article the other day about how the obesity epidemic is increasing all over the world. How each country is trying to find a solution reduce and rid their people of this problem. One way governments are trying to is to label food in a different matter. We here in the US are going to be seeing new nutrition fact labels soon on packaged foods. Other countries already have implemented their attempted solution to the problem, which red, yellow, and green markings on the food package. This made me think. When I taught children in summer camps we used this method as well, of colors to distinguish bad, moderate, and great foods. It makes sense but can that be the solution?  Is it really that simple of a solution to fix a complicated problem?

Packaged foods rule our world, well especially in the US. I understand that not everyone has the time or means to cook. There are some packaged products that aren't bad and more efforts are being made to make better for you packaged goods. The solution in my opinion has to be met in the middle.

 Life today is fast and demanding, so to dedicate an hour may be too much for people. I disagree. You have to make time for your health. Meals to don't need to be complicated or overworked or be of Top Chef quality. They just have to be good for you. This recipe inspired this post because of the 3 colors, red, yellow and green. Our food that we eat should be what is colorful, not the sign in front telling us it "healthy". Education about food, different recipes, and ways to prepare and consume meals is what is lacking from all of these solutions. If we provide education of how to prepare meals that will provide well-being thats when change will really start to occur. I am happy to see that communities are making more of an effort to provide gardens and locations that offer better foods in a convenient way. If we take just 20-30 minutes to prepare a well balanced delicious meal a few more times a week then we can reach the goal of reducing this obesity epidemic in my opinion. 

Yields 4 servings 


1 lb peeled and deveined shrimp (wild caught preferably)

1/2 red bell pepper - small dice 

1 small yellow onion or shallot - small dice 

1/2 green bell pepper - small dice 

1/2 cup squash/butternut squash or pumpkin (optional)

1/2 cup full fat coconut milk 

1 clove garlic - smashed 

1 tablespoon green curry paste 

1 tablespoon red curry paste 

1/2 teaspoon turmeric powder 

1/2 teaspoon curry powder 

1 packet of kelp noodles- rinsed and drained 

1 red chili pepper - diced (optional) 

Fresh cilantro for garnish 

3 tablespoons Olive oil 


1. In a large pan heat olive oil over medium heat. Add the onions, squash, and peppers and saute. 

2. Add the curry pastes and spices and lower heat to low, stir and allow this to become fragrant. 

3. Add the garlic and coconut milk. 

4. Meanwhile rinse and drain well the kelp noodles. These are from seaweed and can be consumed raw. We will be lightly warming them when we add them to the curry. 

5. Lightly season the shrimp and add them to curry pot. Cover and let this cook for about 5 minutes until the shrimp are cooked. Once they are add the kelp noodles to the pot and stir to mix. 

6. If you would like the dish to be spicy add the chili pepper and garnish with fresh cilantro. 

Serve and enjoy!
