Kiwi Cucumber Cooler

It is getting hot hot hot! Spring is here and down here in South Florida the weather is changing from warm to no humidity to hot with humidity, and we are waiting for extremely hot with a lot of humidity. Living in South Florida is wonderful, but the heat can be hard to handle some time (not complaining at al!!!). Summer is a beautiful season with long days, warm weather, and plenty of outdoor time. With that being said we need some refreshments to rehydrate and rebuild nutrients. This mocktail, which can easily be converted to a cocktail is a super delicious drink to prepare to cool down from the summers draining heat. 

Reasons why this Kiwi Cucumber Cooler is extremely health benefitting to us. 

Kiwi- Is rich in Vitamin C, actually contains more than citrus. This vitamin c that we like to think of supporting our immune system keeping us cold free it also helps rebuild a deteriorating protein, collagen. As we age collagen breaks down, which means our skin, nails, hair, and youthful aspects don't look as youthful anymore. Incorporating kiwi more often into your diet will help to rebuild the protein collagen, which help to give your skin a more youthful appearance. 

Another reason why kiwis fabulous and this is health benefitting is due to its digestive boost. Kiwis help to reduce digestion inflammation. The more regularly we consume kiwis the less inflammation we have in our gut and digestive organs. The less internal inflammation we have the more balanced our body is and the more nutrients we can properly digest and use effectively to maintain health. 

Cucumber-  A wonderful way to hydrate is with vegetables that contain a lot of water. Cucumbers are one of those vegetables. The bonus of water rich vegetables are the vitamins, minerals, and fiber that are also contained in the vegetable. 

This drink is vitamin, mineral, and fiber rich which is a recipe for health boosting nourishment.

Recipe 

Yields 2 

Ingredients: 

2 kiwi - peeled and halved 

1/2 english cucumber - peeled and sliced 

1/2 cup ice 

1 lime - juiced 

1 tablespoon honey (optional)

1 bunch of fresh mint for garnish 

Method: 

1. Place a blender the kiwis, cucumber, lime juice, and honey. Blend everything until pureed. 

2. Then ice and blend all the ingredients together until the consistency is like a slushy. Pour the kiwi cucumber cooler into 2 glasses and garnish with a slice of kiwi and fresh mint.
