Valentine's Day is around the corner and well it wouldn't be Valentine's Day without a good chocolate dessert. I believe everyday you should treat yourself with a chocolate delight, but especially today! If you are making a romantic meal this dessert is the one you want to make. It is simple and seriously so rich and decadent if your loved one hasn't fallen in love with you yet just wait until they take the first bite.
This no-bake chocolate ganache mini tart is a great go to elegant dessert that is rich and filled with so much chocolate. If I had my way I would eat one every day! Valentine's Day is a great holiday to celebrate! It is all about love and I feel that we all could always use a bit more love. It brings out the best and happiest feelings in us. Whether we are little kids excited about receiving all the candy from our friends at school, which is a great memory from elementary school, or whether we are grown adults excited to share it with our best friend or companion. Regardless of who we are sharing this holiday with we should spread the love to strangers and those who may not have anyone to spend it with. It would be wonderful if we could turn this holiday into a holiday of spreading love versus just sharing it with our significant other. So maybe we could start that this year, just be kind and spread the message of love to a stranger on this holiday.

Yields 4 individual tarts
Time 4-6 hours for setting
For the crust:
3 cups chocolate cookies - I used the brand Mi-Del
3 Tablespoons butter - melted
For the Filling:
2/3 cup dark chocolate chips - melted
2/3 cup semi sweet chocolate chips - melted
4 Tablespoons unsalted butter
2/3 cup heavy cream
1. In a food processor blend together the chocolate Mi-del cookies and butter. Process the cookies until the cookie crumble can come together when you press it with your fingers. Evenly add the chocolate cookie crumble crust into the tart pans and press it all along the ridges and bottom. Place this in the fridge for 2-3 hours for the crust to fully set.
2. Once the cookie crust has set it is time to make the chocolate ganache. Add both chocolates into a double boiler. Melt the chocolate and once it is almost melted add the butter and stir until the ganache is shiny. Then turn the heat off and add the heavy cream. Mix! The consistency will change but stir until the ganache becomes a bit thicker. Pour the chocolate ganache into the set cookie crust. Place the ganache filled tarts into the fridge to fully set for 4-6 hours.
By the way it is best the make this dessert the day before!
Once the chocolate has set carefully remove the tart tins and serve with some added shaved chocolate.
