Drooling as I am writing this post. Literally mouth is salivating and totally wanting to eat this decadent skillet cookie right NOW! The crispy edges and the gooey soft almost cookie dough like center is literally heaven in a skillet. The heat that the iron skillet transfers to the cookie makes for a totally indulgent treat and the perfect balance of crispy edges and soft gooey center cookie.
Yields 4 large servings
Time 60-70 minutes
3/4 cup Light Brown Sugar
1/2 cups Cane Sugar
2 large eggs
12 tablespoons of unsalted butter - soft
1 3/4 cup all purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon sea salt
1 teaspoon vanilla extract
1/2 cup dark chocolate chunks
1/2 cup semi sweet chocolate chips
1. Preheat the oven to 365 degrees. Grease the iron skillet slightly.
2. In a stand mixer add the sugars and softened butter, cream until smooth. Scrape down the sides of the mixing bowl. Add the 2 eggs and vanilla extract and mix until the yolks break.
3. In a separate bowl add the flour, baking soda, baking powder, and sea salt. Gently mix together. While the mixer is on low/medium add the dry mixture to the wet. Once a the dough is mixed stop mixing.
4. Fold in the chocolate chunks and chocolate chips. Pour the cookie dough in the iron skillet. Bake for 35-45 minutes. The edges should be crispy and soft yet cooked center.
Remove and let it cool.
