It's not Christmas without Peppermint Bark. Growing up I would get a box of Peppermint Bark from William Sonoma and it would be gone before Christmas day. I would literally eat the entire bark by myself during the weeks that lead up to Christmas. It was my favorite! When I moved away for college I didn't have the bark at home to indulge in during the holidays. So I started to make my own. This recipe of Peppermint White Chocolate Bark I have been making for years and I make it early in December and have a piece once a day. It is a Christmas treat!
The recipe is really very simple, but delicious to have a homemade version always on hand!
Yields 10 servings
Time 2-3 hours
1 cup semi sweet or bitter sweet chocolate - melted
2/3 cup white chocolate chips - melted
2 candy canes - crushed
1. Line an 8x8 tray with wax paper.
2. In a double boiler melt the semi sweet or bitter sweet chocolate. Once melted spread with a spatula the melted chocolate on the wax paper. Place this in the freezer for 1.5 hours until it is fully set.
3. Melt the white chocolate chips and then spread this evenly over the solid set chocolate. While the white chocolate is still wet and melted top with the crushed candy cane over it. Place this back in the freezer to set for an hour.
4. Once the bark has completely set, cut it organically.
The bark keeps best in the freezer and remove it about 10 minutes before you want to it eat.
