Mi-del Chocolate Snaps- These cookies are ones that I recommend having in your pantry. They use organic ingredients, not overly sweet, and they are much much much better options than conventional cookies.
Cream Cheese- I recommend using a good quality cream cheese for these truffles since there are so few ingredients. I used Whole Foods Organic cream cheese.
Semi sweet chocolate
Dark chocolate – Using more dark chocolate than semi sweet increases the health benefits of the truffles. Dark chocolate has less sugar than semi sweet and milk chocolate and also dark chocolate contains anti-oxidants. These anti-oxidants help fight free radicals which can harm our cells and damage our bodies.
Coconut oil – Using coconut oil not only makes for a beautiful ganache but it also helps our cholesterol. Coconut oil lowers the bad cholesterol (LDL) and raises our good cholesterol (HDL).

Cookies and Cream Chocolate Truffles
Ingredients
- 25-30 Mi-De Cookie Chocolate Snaps
- 5-6 oz Organic Cream Cheese
- A pinch of Salt
- 1/3 cup Dark Chocolate
- 1 TBLS Coconut Oil
- Garnish with Pistachio and a pinch of rock salt
Instructions
- 1. Place the Mi-del chocolate snaps in a food processor. Process and pulse until the cookies become a fine powder. This should take about 2-3 minutes. 2. Once the cookies have become a fine powder add the cream cheese and a pinch of salt. Process until it forms a ball. Scoop even amounts on a lined tray with parchment paper. Place the truffles in the fridge for 30 -40 minutes until they are fully set. 3. To make the ganache melt together the 2 chocolates and coconut oil. You can microwave it for 30 seconds at a time. If not all the chocolate is melted use a spatula mix well and the residual heat will melt all the chocolate. Using a spoon drop a truffle in the melted chocolate and coat evenly the truffle. Place the chocolate coated truffle back on the parchment paper lined tray. If you are garnishing the truffles add the garnish when the truffle is still wet. Pop the truffles back in the fridge and let them set for 1-2 hours. Keep refrigerated until ready to serve. Enjoy!
