Breakfast with chocolate I will take a bowl please and thank you! Starting the day off with some chocolate and quinoa cereal sounds like a great start to any day. This cereal isn't like your usual cereal or mueslix the texture is a bitter different, think more gooey rather than crunchy. If you are looking for a new breakfast recipe to change up your routine, but still keep it nourishing seriously this recipe is the one for you. Plus you can eat chocolate in the morning!
The best part about this recipe is that the chocolate melts over time while it is sitting in the milk and turns the milk into chocolate milk. Literally like the best part of any cereal is the cereal milk, I mean c'mon just look at Momofuku's Milk. They turned a normal everyday thing, cereal milk into a phenomenon. Hello genius!
Alright so this isn't the same thing, but still just as tasty! The cereal is low in sugar from the honey used and filled with sources of fiber to keep you filled, some good healthy fats from the almond butter and hint of chocolate, and richly packed with nourishment. Definitely not your average meal to start your day, but one that is unique but most importantly delicious!
If you are not one to have cereal for breakfast this recipe also makes for a good snack or perfect to top on a scoop of ice cream for a little dessert!
Yields 6 servings
Time 2-3 hours for setting
1 cup cooked quinoa and cooled
1 cup rolled oats
2/3 cup crunchy almond butter
1/4 cup honey - melted
1.5 cups dark chocolate - melted
1. To cook the quinoa place 1/2 cup of quinoa in a sauce pan with 1/2 cup a water. Bring it to a boil, lower the heat to low and cover the pot. Let the quinoa cook for 15 minutes. Once cooked fluff it with a fork and place it on a plate spread out for it to cool faster.
2. Melted together the almond butter and honey. I did this in the microwave to save time. Pour this into a bowl with the oats and cooked quinoa. Mix with all together with a spatula.
3. It is best to use a loaf pan or square brownie pan and line it with wax paper. Pour the quinoa oat mixture into the lined pan and smooth it out evenly. Place this in the fridge to set for 2 hours.
4. Once the quinoa oat cereal has set (will still be gooey and not 100% firmly set) it is time for the chocolate. Melt the chocolate chips and pour it evenly over the quinoa oat cereal layer. Place this in the fridge to set for 1-2 hours or best over night.
5. When you are ready to serve use a sharp knife to cut the cereal into pieces. Since the bottom cereal layer isn't totally firm it will sort of crack and break on it own. Place the cereal and chocolate into a bowl and pour over some milk.
