When you hear bread pudding you probably think dessert. Something sweet, definitely not savory. Well it's time to change that thought, and now think of a savory bread pudding. This is a fabulous brunch recipe to serve any guest or no guests at all and just yourself! It is elegant, it is unique, and most importantly it is so freaking delicious.
Think of this dish like a bag and lox. Instead of the bagel there is a sourdough baguette that has soaked up the liquid infused with dill and topped with some cheese and a bright flavor of smoked salmon. Literally in love with this recipe (haha)!
I wanted to test myself, push myself to think beyond. I have really been trying to do that with my recipes lately. Prepare the classic recipes is fabulous, but one thing I always teach the kids I teach in their culinary classes is that techniques are the tools to drive your kitchen and cooking creativity. All the chefs know the same techniques, it is what we do with those techniques our flavor interpretation, our life experiences, and cultural gastronomic awareness that makes us each unique when we cook.
Yields 6 servings
Time 35 minutes
1 sourdough baguette - a few days old (so it should be hard)
2 large eggs
1 cup of milk
1 Tablespoon fresh dill - minced
4 oz smoked salmon
2 Tablespoons cream cheese
1/4 cup Parmesan cheese - shaved
1 teaspoon capers
4-6 caper berries
1 teaspoon salt
1/2 teaspoon black pepper
1. Preheat the oven to 330 degrees. Lightly butter or grease with olive oil a baking dish and set this aside.
2. Cut the sourdough a few day old baguette. It will be a bit tough to cut since it is hard. Place the pieces in a bowl.
3. In a separate bowl whisk together the eggs, milk, dill, salt and pepper. Pour this liquid mixture over the cut bread and mix it well together. Then gently pour this mixture into the greased baking dish. Top with the shaved Parmesan cheese. Place this in the oven to bake for 20-25 minutes. (I recommend more on the 25 minutes side).
4. Once baked carefully remove the dish from the oven. Top with the smoked salmon, the cream cheese, and the 2 kinds of capers. If you would like garnish with a bit more dill and serve.
