Waffles you gotta love them! They are beyond simple to prepare and a great breakfast or brunch treat on the weekends. Of course they can be enjoyed any day of the week! Since we are in full fall swing I wanted to add a little twist to this recipe with apple cider. Apple cider is a delicious autumn drink, so concentrated in rich apple flavor and really a treat all by itself. I love when the grocery stores begin to stock the shelves with apple cider, just the sight of that makes me happy since it means falls. It is a versatile drink and well with recipe we aren't using it as a beverage by rather using the essence and concentrated flavor to get an apple flavor to these fluffy and airy waffles.
Waffles can really either be sweet or savory they are a unique breakfast time that can be use in many different ways. This recipe though is on the sweeter side. Not necessarily that it has more sugar, but with the use of apple cider, cinnamon, and the cranberry sauce it is a fall sweet delight waffle. So grab your whisk and waffle maker and enjoy these fall inspired breakfast waffles.
Yields 2 servings
Time 15 minutes
3/4 cup all-purspose flour
1 large egg
1/4 teaspoon sea salt
1 teaspoon baking powder
1/4 cup apple cider
1/2 cup milk
1 tablespoon butter
1 teaspoon ground cinnamon
1 teaspoon honey
1. In a bowl whisk together the ingredients for the waffles. You are looking for a loose consistency.
2. Preheat your waffle maker. Once hot pour half the batter in the waffle maker and close it. Let is cook for 5 minutes until golden. Repeat with the remainder of the batter. Place the waffles on a plate and let them cool slightly.
3. Warm the butter slightly in the microwave to soften it but not melt it. Mix in the honey and cinnamon. Top the waffles with the cinnamon butter and cranberry sauce.
Drizzle with maple syrup and enjoy!
