Lemon Poppy Seed Donuts

Oh happy weekend! Don't you just love the ability to relax a bit more for breakfast on the weekends? I usually start my week with work right after getting up and start emailing with a cup of coffee in my hand and either a granola bar or some fruit I munch on as my breakfast and head out the door. Weekday mornings are rushed, so it is so wonderful when the weekend is finally here and you can just relax! 

Baked donuts are like a breakfast bread, just shaped like a donut. Unlike the fried donuts which tend have these incredible pockets of air, baked donuts are bit more dense. Let's be honest here they are better for you. Anything fried just isn't good for the health so baking your donuts is the way to go. On the weekends we tend to indulge a bit more with our food choices, and there is nothing wrong with that. It is all about moderation. My wellness program is all about moderation. If you incorporate the foods you love and tweak some, like these "donuts" and enjoy them in moderation, like every once in a while on the weekends living a healthy lifestyle is seriously easy. So enjoy a donut, bake it don't fry it, and don't have half a dozen, savor just one. 


Yields 6 donuts 


1/2 cup all purpose flour 

1/3 cup organic cane sugar 

1 teaspoon vanilla extract 

2 large eggs 

3 tablespoons of unsalted butter - melted and cooled to room temperature 

1/2 lemon zest

1 tablespoon lemon juice 

1 tablespoon + 1/2 teaspoon poppy seeds 

A pinch of sea salt 


Preheat the oven to 350 degrees. 

Melt the butter either in the microwave for about 15 seconds, if it isn't melted all the way, add another 10 seconds until the butter is melted. Leave it on the counter to cool a bit. 

In a stand mixer add the eggs, vanilla, sugar, and lemon juice. Mix until the egg yolks break. 

Then add the flour all at once, turn the mixer on low/medium and mix until a batter is formed. 

Add the pinch of salt, lemon zest, poppy seeds, and with the mixer on low add the butter. 

Once the batter is complete, it should be a very loose batter. 

Evenly scoop the batter into the donut pan. 

Bake in the oven for 10-12 minutes. 

Let them cool for 5 minutes, then carefully flip the pan onto a cooling rack.

The donuts should be completely cool before garnishing them either with powdered sugar or a sugar glaze. 

Serve and enjoy one!
