Weekend breakfasts in my opinion are great for pancakes. Making pancakes really aren’t that difficult and make the weekend morning a little bit more special than usual. This weekend we celebrated my 30th birthday, which has been amazing. So much fun with family, food, and celebrations. But to make it extra special having a stack of these deliciously fluffy Banana Cinnamon Pancakes of course in bed with coffee on a Sunday morning made the birthday weekend extra special.
Banana and cinnamon are a marvelous pairing. They compliment each of the naturally sweet and yummy flavors. I always have left over bananas in the house from the week that go past their edible ripeness. So naturally I gravitate towards banana bread or my Banana Chocolate Chip Sheet Cake. If you haven’t tried you must. It will change your world!!!
A nice drizzle of good maple syrup over top this warm stack of Banana Cinnamon Pancakes with some slices of banana and fresh berries makes this a personal favorite weekend pancake recipe.
Banana Cinnamon Pancakes
- 1.5 cups All- Purpose Flour
- 1 tsp ` Baking Powder
- 1 ripe Banana mashed
- 2 large Eggs
- 1/2 cup Whole Milk
- 1 TBLS Sugar
- 1 tsp Ground Cinnamon more for dusting
- 1 TBLS Butter
- 1. In a large bowl mix all the ingredients together except the butter. Make sure a nice smooth pancake batter is formed. Not too runny or soft. 2. Heat a large flat skillet over medium heat with half of the butter. Once the butter has melted scoop 3 even ladle fulls of pancake batter. This batter should make 5-6 pancakes. Once the pancakes have cooked half way reduce heat to low and flip. Continue cooking the pancakes until soft, fluffy, and fully cooked. Add the remaining butter and repeat the process.3. Stack the pancakes on top of each other and add a sprinkle of cinnamon, banana slices, fresh berries and a drizzle of maple syrup. Enjoy!
