5 Ingredient Tomato Soup

This 5 ingredient tomato soup is all about simplicity. Nothing like only have a grocery list of like 3-4 ingredients and making a really easy meal. I have no idea what that feels like (haha). I am pretty sure I live at the grocery store and basically everyone knows me, especially at the local Whole Foods. Nope not ashamed to say it!

 This recipe is great for the super duper busy weeknights and week days. Since this makes 6 servings you will have plenty of leftovers if needed. So meal prep for a few days can be checked off your list.

If you are coming home late just reheat this tomato soup and pair with a grilled cheese sandwich and just like that you have really quick meal. Yes that is exactly what I am having for dinner tonight as I stay up late to write all these recipes. Of course this recipe is great as part of a more complete meal. Grill or roast some chicken, pork, beef, or shrimp. Really anything goes here!

The beauty of this tomato soup recipe being only 5 ingredients you can add you own twists of flavors to it. Make the dish your own, add a hint of fresh parsley and basil leaves, garnish with sour cream and come shredded mozzarella cheese. I love to cook it with some white beans and quinoa for a more hearty meal. This is a basic and classic tomato soup which is delicious as is. Sometimes it is fun to change up the flavors if you make this soup on a regular basis.

5 Ingredient Tomato Soup

Cook Time 20 minutes
Total Time 25 minutes
Servings 6

Ingredients

  • 1/2 Yellow Onion small dice
  • 2 cups Vegetable stock
  • 2 cups Chopped Canned Tomatoes
  • 3 cups Pomi Tomato Puree
  • 1 TBLS Olive Oil
  • 2 tsp Sea Salt
  • 1 tsp Black pepper
  • Fresh basil for garnish
  • Heavy Cream for garnish
  • Best served with a fresh baguette

Instructions

  • Directions
    1. In a stock pot or ceramic pot heat the olive oil to medium heat. Once hot add the onions a pinch or 2 of salt to allow them to sweat for 2 minutes. 
    2. Add the tomato puree, diced tomatoes, vegetable stock, and season well with salt and pepper (about 2 teaspoons each to start). Bring the tomato soup to a simmer and cover the pot and turn to low and let this cook for 25 minutes. 
    3. After the soup has cooked taste and adjust the seasoning if necessary. Turn the heat off and keep the soup covered and let it sit for about 15 minutes and then serve.
