15 Minute Peas and Lemon Pasta

Dinner ready in 15 minutes with this peas and lemon pasta. A perfect weeknight vegetarian meal that is zesty, bright, and healthy.

I know you probably think I am crazy to have a gourmet delicious and fresh meal ready on the dinner table in less than 20 minutes. Promise that this 15 minute peas and lemon pasta will be ready in a flash. Week days seem to get busier and busier even though we continue to knock things off our To-do list. Why does that happen? We add more than we take off? We aren’t doing enough? I have given up in finding the answer so instead I am giving and taking on the To-do list with excitement and not letting time consuming things get in the way, like cooking. No seriously, cooking can take forever sometimes. You see a delicious meal you want to prepare and when you get ready to cook you realize this is going to take forever. No one, not even me wants to spend relaxing time after work laboring in the kitchen to eat dinner.

We all need more quick but GOOD recipes. I don’t believe that we should skimp on quality even if the meal only takes 15 minutes to prepare. What we eat is so important, but so is our time. So let’s combine the 2 into this nourishing wholesome fresh pasta meal. 

Now that we are approaching into the spring season it is lovely to have a lighter meal. Pasta night is a great weeknight meal to prepare for yourself or for your family. If you have kids this is an easy recipe to get them to eat more varieties of vegetables. Add this to your recipe list of weeknight meals because this 15 minute peas and lemon pasta is delicious!

15 Minute Peas and Lemon Pasta

  • 1/2 box Whole Wheat or Regular Spaghetti
  • 1/2 cup Freshly Grated Parmesan Cheese + extra for garnish
  • 2 TBLS Extra Virgin Olive Oil
  • 1 tsp Butter
  • 1/2 cup Frozen Peas
  • 1/2 Lemon Zested
  • 1 TBLS Lemon Juice
  • Fresh Mint and Basil Leaves
  • 1 tsp Dill
  • Salt and pepper



    1. Bring a large pot of water to a rapid boil. Then heavily salt the water. Add the spaghetti in the boiling water and cook the pasta as recommended by the box for al dente pasta. 

    2. While the pasta is cooking prepare the sauce. In a bowl add the lemon zest, juice. butter, olive oil, peas, and dill. 

    3. Once the pasta is cooked and al dente add it to the bowl with the lemon juice and other ingredients. Add the cheese into the bowl and toss the pasta together to melt the butter and peas and coat the cheese over the spaghetti. Then add a tablespoon or 2 of the pasta water and the fresh mint and basil. 

    Serve the pasta and garnish with some extra freshly grated parmesan cheese.
