Gluten-free Quinoa Broccoli Cheddar Casserole

Happy New Year! Start the year off with an easy and healthy Gluten-free Quinoa Broccoli Cheddar Casserole. Casseroles make for a great Sunday supper recipe or an easy and quick weeknight meal. Easy and quick are 2 favorite words when it comes to make a healthy meal.

This casserole is filled with whole grains and protein. Quinoa is a gluten free grain and also a complete protein. If you would prefer to make this casserole without chicken and more vegetarian, nix the chicken and still get the protein. Quinoa is a pretty cool grain because it is a complete protein. This means that it as all the same protein chicken has, but more fiber, and more vitamins. Quinoa also doesn’t contain gluten, great for anyone who wants to reduce their gluten intake.

Broccoli cheddar is a classic combo. Love it, but broccoli cheddar soup isn’t the most healthy. Cream and loads of cheese doesn’t scream health. So to maintain a healthy start to the year, but also maintain it throughout the year recipes like this are wonderful. You still get all the same flavors, but instead of the loads of added calories and unhealthy fat you will get a dose of great protein and much more fiber.

Gluten-free Quinoa Broccoli Cheddar Casserole

Ingredients

  • 1.5 Heads of Broccoli steamed
  • 2 cups Roasted Chicken pulled
  • 2 cups Cooked Quinoa
  • 1.5 cups Cheddar Cheese
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. 1. Prepare quinoa according to the package. Cook 1 cup uncooked quinoa. Once cooked and cooled slightly add the quinoa into the bowl with the other ingredients. 

    2. Pull roasted chicken and place in a bowl. 

    3. Steam broccoli florets until al dente about 2-2 1/2 minutes. Place the steamed broccoli into the bowl with pulled roast chicken. Toss everything in the bowl with salt and pepper. 

    4. Preheat the oven to 350 degrees. Place all the ingredients in the bowl into a casserole dish. Top with the shredded cheese. Bake the casserole for 15 minutes until the cheese melts and the casserole is warm. 

    Serve and enjoy!
