Vegetarian Quinoa Stuffed Peppers

A good weeknight vegetarian dish is just what we need this time of year. Vegetarian Quinoa Stuffed Peppers is a favorite easy healthy dinner option. This recipe is simple and takes less than 30 minutes to prepare.

Stuffed peppers are a classic family style recipe. Typically stuffed bell peppers are filled with beef, ground chicken, pork, or turkey. Those recipes are delicious. This recipe I wanted to focus on a vegetarian substitute for those fillings. Still just as delicious but rich with more heart healthy fiber from the whole grain quinoa.

Quinoa is an awesome grain because it is both a whole grain and a complete protein. Which means you don’t have to add any animal protein to get your protein from this meal. This quinoa is cooked with onions and mushrooms to give you more veggies and more rich flavor. Of course topping the peppers with some shredded cheese is like the icing on the cake. A bit of cheese to give you that ultimate winter weather comfort from your dinner.

Stuffed peppers are an easy weeknight dinner option because you eat the vessel with which your food is in. So added bonus clean up isn’t that messy, woohoo!

Vegetarian Quinoa Stuffed Peppers

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings 4

Ingredients

  • 4 Red and Green Bell Peppers tops removed and de-seeded
  • 2 cups Quinoa
  • 1 Yellow Onion minced
  • 2 pints Mushroom cut into small pieces
  • 1 cup Vegetable Stock low sodium
  • 1 cup Water
  • 1 TBLS Fresh rosemary cut finely
  • 4-8 slices Mozzarella Cheese
  • 2 tsp Sea Salt
  • 1/2 tsp Black pepper
  • 1 TBLS Olive Oil

Instructions

  1. 1. To prepare the quinoa add the olive oil to a sauce pan over medium heat. Then add the onions and mushrooms and let them cook with a few pinches of salt for 4-5 minutes. Then add the quinoa and rosemary. Add the rest of the salt and pepper. Add the water and vegetable stock and bring this to a boil. Once at a boil lower the heat to low and cover the pan. Let this cook for 15 minutes. 

    2. Once the quinoa is cooked fluff it with a fork. 

    3. Cut the stems of the bell peppers off and remove the core and seeds. Place the peppers in an oven proof dish cut side up. Once the quinoa is cooked spoon even amounts into the bell peppers. Place the cheese on top. 

    4. Broil the peppers until the cheese melts and becomes golden. Serve warm and enjoy!
