Ingredients

  • 1 cup Cooked Quinoa cooled
  • 1 cup Rolled Gluten Free Oats I recommend Bob's Red Mill
  • 2/3 cup Crunchy Almond Butter
  • 1/4 cup Honey melted
  • 1 1/2 cups Dark Chocolate melted

Instructions

  1. 1. To cook the quinoa place 1/2 cup of quinoa in a sauce pan with 1/2 cup a water. Bring it to a boil, lower the heat to low and cover the pot. Let the quinoa cook for 15 minutes. Once cooked fluff it with a fork and place it on a plate spread out for it to cool faster.

    2. Melted together the almond butter and honey. I did this in the microwave to save time. Pour this into a bowl with the oats and cooked quinoa. Mix with all together with a spatula.

    3. It is best to use a loaf pan or square brownie pan and line it with wax paper. Pour the quinoa oat mixture into the lined pan and smooth it out evenly. Place this in the fridge to set for 2 hours.

    4. Once the quinoa oat cereal has set (will still be gooey and not 100% firmly set) it is time for the chocolate. Melt the chocolate chips and pour it evenly over the quinoa oat cereal layer. Place this in the fridge to set for 1-2 hours or best over night.

    5. When you are ready to serve use a sharp knife to cut the cereal into pieces. Since the bottom cereal layer isn't totally firm it will sort of crack and break on it own. Place the cereal and chocolate into a bowl and pour over some milk.

    Enjoy!
