6 Ingredient Cranberry Almond Granola Bars

Simple recipes are best, especially when it comes to kids! I teach children, teen, and adult cooking classes and no matter the age group simple recipes always seem to be enjoyed more and repeated in their own kitchen. If you don’t know what I do let me tell you a bit about it. I created a culinary/cooking program for elementary age children. This program is both an after school 12 week program and a private lesson based set of classes. Each class we have 1-3 recipes.

These recipes are based on different techniques, unique ingredients, or focused on specific cultural recipes. It amazes me how incredibly curious kids get when they are given the task to make a recipe. I get many kids who don’t like, well let’s say they don’t like anything. Part of what I do is not to change their likes and dislikes of certain foods, but more so to enhance their interest in the preparation.

Kids love to cook

I have been teaching kids cooking classes for 7 years now and most kids are picky. It is part of being a kid. I am not here to fight them on it. Rather I am here to engage them in the process. Teach them about the science behind cooking, or the cultural roots a dish has. When kids cook with their peers they are even more interested in participating in the lesson. Again they might hate everything they are making, but they are beyond interested in the cooking process.

It really doesn’t matter the age group all kids and teens love to be a part of the cooking process. The goal of this is to get them to try new ingredients or even get them to eat more foods like vegetables, whole grains, and non-refined sugars.

6 Ingredients Cranberry Almond Granola Bars

Cook Time 1 hour
Total Time 1 hour 10 minutes
Servings 8 servings

Ingredients

  • 2 cups Quick Cook Oats pulsed finely
  • 2 TBLS Ground Almonds
  • 4 TBLS Unsweetened Coconut Flakes
  • 100 grams Dried Cranberries chopped finely
  • 50 ml Coconut Oil Melted
  • 6 TBLS Honey

Instructions

  1. 1. Grind 1 cup of oats and mix with almonds, coconut and remaining oats in a food processor. Mix in dried cranberries.

    2. In a small saucepan over low heat, melt honey and coconut oil. Pour into the oat mixture and mix well.

    3. Press into a  loaf pan and refrigerate for 1-2 hours. Cut into squares. Enjoy!!
