Summer is a wonderful time of year. Not only do we have a break from our schedule and vacations. We also have amazing produce. This summer the stone fruit were unreal. Out of this world GREAT!  They were amazing to just grab a peach and enjoy and to bake with, well let’s just talk about that.  One thing I love to do it bake with fruit. You get a completely different flavor, texture, and aroma when you bake with fruit. Baking with is a wonderful thing to do when we are in abundance of the fruit. So basically during the peak of their season.

As Fall Begins

As we transition into the next season, fall we still are getting a good amount of stone fruit. The last of the season. With this recipe I wanted to share with you all a wonderful way to use some over ripe peaches to make a decadent breakfast. It happens to  us all when we may have purchased too much fruit or maybe ones that were a little too ripe and don’t want to toss them into the garbage. Instead you can roast them and use them as part of your hearty healthy breakfast, or as a sweet treat for dessert with a scoop of ice cream or dollop of whipped cream.

Crumbles, cobblers, jams, and compotes make for a magnificent way to use peak season fruit or overly ripe fruit. Unfortunately in this country we waste a lot of food. Let’s not contribute to that. Instead preheat your oven and toss a few ingredients together and you have created a delicious dish and also helping to save our planet.

 

 

End of Summer Peaches and Granola Honey Yogurt Bowl

Roast Peach Granola Honey Cereal Yogurt Bowl

Servings 4 servings

Ingredients

  • 2 Peaches Halved and Pitted
  • 1 tsp Ground Cinnamon
  • 1/4 tsp Ground Nutmeg
  • 1 tsp Honey plus more for drizzling after
  • 1 TBLS Maple Syrup
  • 2 cup Plain Full Fat Yogurt
  • 1 cup Honey Oat and Nut Granola I used Whole Foods

Instructions

  1. 1. Preheat the oven to roast setting 400 degrees. Place the peaches in an oven proof baking dish. 

    2. Over the peaches drizzle the honey, maple syrup, and sprinkle the spices. Roast the fruit in the oven for 30-35 minutes, until they become fragrant and soft. Once roasted remove them from the oven and allow them to cool before serving. 

    3. Once they have cooled, add your yogurt to a bowl, add 1/2 a roasted peach, add your granola, and drizzle with some extra honey and serve.

Recipe Notes

  • If you are serving this dish as a dessert you can serve the peaches warm with vanilla ice cream. 
  • The peaches will keep in an airtight container in the fridge for 2 days.
