These may become your new favorite breakfast. So I started today a video cooking series on my Instagram. You can find it on my Instastory or on the cooking series highlights. It would be great to get your support about it.

You know it us hard to put yourself out there. I have always been one to step up and take center stage, but as I get older it actually becomes harder. It is easier because it something I love, cooking and educating others on it. But at the same time I am talking to people I don’t know, people I have never met, and letting them into my life and sharing it. I guess in todays day and age we have to be okay with it. Especially if one has chosen to move forward and be active on social media, you have to become comfortable with it. So I guess this is me declaring that I am going to be comfortable with it and push myself to continue with this series so that I can reach and teach more people easy delicious recipes.

This recipe of Healthy Oat Blueberry Breakfast Cookies are so easy and a fun way to get some really great nutrients at the start of your day. These are also a big hit with kids, especially if you let them help  make them.

Get your kids in the kitchen with you

I know sometimes it can be a mess to have your kids help you in the kitchen. Not this recipe it is a one bowl and done kind of clean up situation which everyone loves. Getting your kids in the kitchen to bake these blueberry breakfast cookies will have them eager to try them. There is no refined sugar, just maple syrup and the sweetness of the blueberries. For a little added sweetness I recommend adding more blueberries or adding a drizzle of honey over the cookie before serving it up. These cookies also make for a wholesome snack.

The best part about enjoying 1 or 2 of these oat blueberry breakfast cookies is that they are only 85 calories per cookie! Isn’t that awesome??? No guilt!

You feel good eating them, you feel good making them and having them in your house, and you feel great serving them to your family!

Ingredients

  • 1 cup Rolled Oats - can you use Gluten free pulse finely
  • 3/4 cup Whole Wheat Flour
  • 1/2 tsp Baking powder
  • 1 1/2 tsp Ground Cinnamon
  • 1/4 tsp sea salt
  • 1/4 cup Milk room temperature
  • 1/4 cup Maple Syrup
  • 1 Large Egg
  • 2 TBLS Coconut Oil melted
  • 1 tsp Vanilla Extract
  • 1/2 cup Fresh Blueberries

Instructions

  1. 1. Using a food processor pulse finely the rolled oats. Then add to bowl with whole wheat flour, sea salt, ground cinnamon, and baking powder.

    2. Then add the egg, coconut oil and vanilla extract. Mix together with a spatula to incorporate the egg. The dough will be a bit tough.

    3. Then add in the milk and maple syrup, stir until a cookie batter is formed. Fold in the fresh blueberries and chill the dough in the bowl in the fridge for 30 minutes. This will help the cookie dough stay together and set. Otherwise the cookies will be mush and fall apart when you bake them.

    4. Once they have chilled for 30 minutes scoop individual cookies (about 13-15 cookies) evenly on a silicone lined baking tray. Gently press the cookies down to flatten them slightly to a thickness you like. Bake in a 325 degree preheated oven for 9-12 minutes. I recommend 10 minutes. Then allow them to cool for 10 minutes before transferring the cookies to a cooling rack.

You can store the cookies in the fridge in an air tight container for up to 5 days.

    Enjoy!
