This recipe is AWESOME! It is gluten free, paleo, healthy, easy, filling but not caloric, and so darn delicious. Literally you can check off each of these requirements and feel so good that you are making yourself and your family a simple and jam packed flavor filled meal. This recipe is one that came about when I was busy one week and wanted to meal prep some recipes for the week and also wanted to have a lighter menu for the week. We all have those weeks when we want to eat a bit leaner and less heavy. Even if you haven’t had one of those weeks this recipe is a great one to add to your routine.

I don’t want to start talking about school and that whole situation just yet, but this easy week night recipe is a good to keep in mind. Let’s get back to how amazing this recipe is.

First off salsa verde is a delicious sauce that comes from the Mexican gastronomy. It uses a green tomato called a tomatillos. The flavor is slightly acidic, bright, vibrant, and adds loads of flavor to something lean like a chicken breast. Cauliflower rice on its own is boring. It needs to be jazzed up with flavor. Well this is where the salsa verde and ranch sauce come in. Adding sauces, especially homemade sauces are a great way to add different flavors to a recipe without a lot of calories.

 

Easy Clean up

Stuffed peppers are a wonderful easy clean up kind of meal. But it is also a plus because you are eating more vegetables. The more vegetables we eat the overall better our health. Using the pepper as the vehicle to hold the delicious salsa verde chicken and cauliflower rice makes this even better for us.

Help get your kids to eat veggies

If you are trying to get your kids to eat more veggies this recipe is a marvelous way to get them interested in more veggies. Plus you hid the cauliflower rice in with the chicken so there is no way they are getting that out! Love using these little tricks to give kids more veggies. Plus feel free if you are not dairy free or lactose intolerant to top these stuffed peppers with cheese. Cheese is a great way to kids intrigued in a dish. Plus slathering this dish with a homemade ranch sauce makes it a creamy and good for you meal!

 

Cauliflower Rice and Ranch Chicken Stuffed Bell Peppers

Ingredients

  • 4 Bell peppers remove seeds and stem
  • 2-3 cups Cauliflower rice I used Whole Foods frozen and thawed it out

Salsa Verde

  • 6 Tomatillos peeled and halved
  • 1/2 cup Fresh Cilantro leaves
  • 1 +more Lime juice
  • 1 clove Garlic crushed
  • 1/4 cup ` White Onion optional
  • 1 Jalapeno optional

Ranch Sauce

  • 2 TBLS Mayonnaise
  • 1/3 cup Full Fat Plain Yogurt
  • 1/4 cup Sour cream
  • 1 tsp Garlic powder
  • 1/4 cup Flat leaf parsley minced
  • 1 TBLS Fresh Dill
  • 1/2 Lemon juiced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Chicken

  • 2-3 cups Shredded Chicken

Instructions

  1. 1. Preheat the oven to 350 degrees.

    2. To make the salsa verde sauce place all the ingredients in a blender and process until smooth. In a bowl with the shredded chicken mix it together with the salsa verde and cauliflower rice.

    To make the pulled chicken, boil the chicken breasts in water. Once cooked remove it and with 2 forks shred the chicken breasts. Since there is little fat on a chicken breast this may be slightly tough. Season the shredded chicken with salt and pepper. 

    3. Place the cored bell peppers stand up in a baking dish. Fill the peppers with the shredded chicken cauliflower rice combo. Bake this in the oven for 45-50 minutes. Once the peppers have cooked remove the baking dish from the oven. Let this cool for 10 minutes. 

    4. Meanwhile mix together the ingredients for the homemade ranch and spoon an even amount on each stuffed bell pepper. You can garnish with fresh cilantro, a squeeze of lime and shredded cheese if you would like.
